Graduates of this program will be professionals with a strong academic background and research skills in the protection of food of animal origin for human consumption. They will apply epidemiological tools for the study and prevention of foodborne illnesses and will be qualified to design and implement quality assurance programs.

– Diagnostic techniques and epidemiological studies in the detection of zoonotic pathogenic microorganisms in food of animal origin intended for human consumption.
– Development, evaluation and validation of the methodology for detecting residues in food.
– Research and development of milk production factors associated with the quality of milk and its products.
– Research into the chemical, physical and microbiological quality of food.
– Research and evaluation of quality assurance techniques for meat products in slaughterhouses.
– Research and Development in the analysis of meat from exotic animal species.
